SUGAR LOW FRIDAY 15 – QUINOA CREAM WITH CANDIED ORANGE PEEL AND FRESH GINGER
This is my entry for the Sugar Low Friday organized by the ever active Sam as a reaction to our past December excesses! I like this because for me it has been a challenge to think of something low in sugar but still sweet and I immmediately decided not to make a variation of what I usually make but something completely new to me! And it was not until yesterday I finally came up with something that I liked, a cream of quinoa with candied orange peel and fresh ginger sweetened with acacia honey and completely fat free. And so simple to make. Well if you don’t like quinoa, this is not your dessert but if you do or if you want something gluten free this is not bad at all! Thanks Sam for waking me up from my sugar torpor!
QUINOA CREAM WITH CANDIED ORANGE PEEL AND FRESH GINGER
2 dl already cooked quinoa
4 dl water
4 tblsp acacia honey
4 tblsp chopped candies orange peel (I used my home made one but if you know where to find good candied orange peel, use that)
4 tblsp corn starch (Maizena)
½-1 tsp freshly grated ginger
- Mix water, orange peel and honey.
- Add the corn starch, the cooked quinoa and the fresh ginger. Stir well.
- Heat it up, stirring all the time and when it is dense, you leave it to cool down.
- Serve it tepid or cold.
