SALAD WITH FISH, RUCOLA, PINE NUTS AND HERB VINAIGRETTE



My chosen subject for this week’s Weekend Herb Blogging has been blogged about several times before but that doesn’t hinder me to do it because I like rucola or arugola so much! A salad with some rucola in it raises above the average salad and tomato sauce with rucola has a freshness to it that I like! Here in Italy, you can buy two types of rucola, the wild one which is the nicer of the two because it has a stronger taste and is even more peppery and a cultivated type which is not bad. I’m sure there is a myriad of varieties but as I refuse to make my own vegetable garden I try to remain ignorant on this subject.

This can be served either as an entrée or as a light lunch. I like the simplicity of it because it leaves a lot of space for the herbs to be enjoyed and I cannot see anything negative in the fact that it is quite healthy!
It is important to choose a fish that doesn’t have a too strong taste and that doesn’t crumble too easily! And I think that you should use any fresh herbs that you like as long as they are fresh!

SALAD WITH FISH, RUCOLA, PINE NUTS AND HERB VINAIGRETTE
4 servings-entrée
2 servings-lunch

200 g/7 oz fish fillets of a type that doesn’t crumble or takes too much space taste wise
Rucola
3-4 tblsp pine nuts
2-3 tblsp freshly chopped herbs, I used thyme, rosemary and parsley
½ finely chopped clove of garlic
1 ½ – 2 tblsp lemon juice
½ -1 tsp salt
Black pepper
150-200 ml/0,63-0,85 cup olive oil

– Chop the herbs and the garlic finely or run them in a mixer or blender. Mix them with lemon juice, salt, pepper and olive oil and stir well.
– Steam the fish and when it is ready, you divide it into smaller pieces that you put in a bowl. Pour the vinaigrette over the fish and let it marinate for about 1 hour.
– Rinse the rucola and toast the pine nuts in a skillet.
– Put the rucola in a bowl and add the fish, the pine nuts and the vinaigrette. Mix it carefully and serve!
