QUINOA WITH LEMON BRAISED ARTICHOKES

I still have some quinoa left so I decided to make a savoury quinoa dish this time. I also have a lot of artichokes so when I did what I always do when I have to decide what to do for dinner, which is opening the fridge door and stare, I saw all these lovely green little heads staring back at me and I knew! I like quinoa but I love artichokes so I just had to make quinoa with artichokes!

QUINOA WITH LEMON BRAISED ARTICHOKES
3-4 servings

2 dl quinoa
3 artichokes
1 clove of garlic
The juice of half a lemon or a little bit less
1-2 tblsp chopped parsley
Salt
Olive oil

- Rinse the quinoa really well and boil it for about 15 minutes in salted water.
- Clean the artichokes and cut it into thin wedges.
- Braise them in olive oil together with the sliced garlic. Add some salt, the chopped parsley and the lemon juice.
- Leave it to braise, I usually add a little bit of water and then I braise it until the artichoke is soft and a bit golden.
- When they are ready, add the quinoa, stir and serve.
