PORK CUBES COATED WITH MUSTARD SEEDS

mustard seeds

Today the sun is shining and the air is mild and I suddenly remember why we live here and not in a city! January always makes me wonder what the *°%§ I’m doing out here but as soon there is the faintest promise of spring in the air I know. And I feel very benevolent towards the world despite the fact that I have just finished reading James Lovelock’s The Revenge of Gaia which made me realize what a precarious situation we have put this planet in. But we still need to eat and I just have to propose the simple little dish that I had yesterday. I say I because my children don’t like mustard and Marco is away so I enjoyed it on my own. But I didn’t mind at all…
It’s so simple that you cannot really call it a recipe…

PORK CUBES COATED WITH MUSTARD SEEDS

Pork meat, I used meat from what I gather from the Cook’s Thesaurus is called a rack of pork
Mustard seeds, look at the photo if you want to know the type, could they be called black?
Salt
Olive oil

- Cut the meat into cubes 2-3 cm x 2-3 cm (and today I’m so benevolent that I give it in inches as well, 1”x1”, can you believe it?!)
- Dab salt onto the cubes before rolling them in the mustard seeds until they are completely covered.
- Fry them in a little olive oil on low temperature so the pork has all the time it need to be completely cooked.
- Eat and enjoy! I made small slices and picked them up with a small fork and felt like a lady. Interior wise at least.
