PALLINE DI LENTICCHIE CON OLIVE or LENTIL BALLS WITH OLIVES.


My quest for the ultimate legume dish goes on, this time I have made fried lentils balls with olives and smoked Spanish paprika and I must say that I liked them. I made 15 and I ate them all without offering anyone else the smallest bit. What a dreadful personality I have sometimes. But I can live with that.



PALLINE DI LENTICCHIE CON OLIVE or LENTIL BALLS WITH OLIVES.
30 balls

200 ml/ 0,85 cup dried lentils
2 small egg yolks
25-30 small olives, good ones
4 tblsp bread crumbs, plus some more to roll the lentil balls in before frying them.
4 tblsp grated parmesan cheese
1 tsp smoked Spanish paprika
salt
extra-virgin olive oil


- Boil the lentils and strain them well.
- Mash them with a fork in a bowl and then you add egg yolks, the chopped olives, bread crumbs, grated parmesan, salt and the smoked paprika.
- Mix it well and make little balls of the size of a walnut that you roll in bread crumbs.
- Fry the lentil balls in abundant olive oil and let them drip off some of the oil on kitchen paper towel before serving.
