CAVOLINI DI BRUXELLE ‘BRASATI’ CON ROSMARINO E PARMIGIANO or BRAISED BRUSSEL SPROUTS WITH ROSEMARY AND PARMESAN CHEESE


I have seen a lot of recipes of Brussels sprouts lately when I have been browsing food blogs and I was thinking ”How strange that everyone is posting about Brussels sprouts” when it occurred to me that it probably is an important part of the Thanksgiving menu, am I right? I have never been particularly interested in what one is supposed to eat at different festivities in different countries because my experience is that festive menus never include the best of any country’s cuisine. I know that I am sticking out my neck here and I do not mean that one doesn’t eat well, I just base it on my own experience which tells me that one should not expect to discover the real goodies of a country from what is eaten on the nation’s different festivities. These are usually found when you eat every day food and it makes you realize the true culinary identity of a country or a region.
Back to the Brussels sprouts, I have always liked them although sometimes I can’t stand the slightly sharp cabbage flavour but I have found that if I braise them, the taste improves a lot and the addition of rosemary and parmesan cheese makes the sprouts raise to unforeseen heights! (ok, I exaggerate a bit…)




CAVOLINI DI BRUXELLE ‘BRASATI’ CON ROSMARINO E PARMIGIANO or BRAISED BRUSSEL SPROUTS WITH ROSEMARY AND PARMESAN CHEESE

500 g/17,6 oz Brussels sprouts, that is the weight before you clean them of the outer leaves
1 clove of garlic
1 sprig of rosemary
1 dl freshly grated parmesan
salt
extra-virgin olive oil


– Clean the sprouts by cutting the end of the stem and removing the outer leaves. Cut each sprout in four lengthwise.
– Fry the garlic for a minute in some oil before you add the Brussels sprouts.
– Add salt and the rosemary needles and let it cook slowly until the sprouts are tender, it takes about 10-15 minutes.
– Just before it is ready, you add the grated parmesan, stir it well so that the cheese melts and then you serve it!
