
This is for the Holiday Cookie Exchange #2 (I will add the right link when Dawn has posted about this week's event) organized byDawn at So Cal Foodie, I was supposed to participate last week but I completely fuddled up the days, I sometimes live in a limbo concerning dates and days. So this week I do post my cookie recipe in time because if I don’t do it now, I’m sure i will forget it! This is one of Marco’s favourite cookies but I don’t make it that often because I’m so lazy that I avoid cookies that I have to roll out the dough in order to make. But sometimes I show my loving wife side and make them for him!
BISCOTTI DI MARCO or MARCO’S COOKIES
Quite a lot, I never count
150 g/5,3 oz salted butter
150 ml/0,63 cup sugar
1 egg yolk
400 ml-500 ml/1,7-2.1 cup flour
1 tsp vanilla sugar
- Stir butter and sugar, add the egg yolk and continue to stir.
- When it is smooth, you add the flour and the vanilla sugar. Work the dough until it keeps together properly.
- Roll out the dough and cut out the cookies with any type of forms that you have, I made cookies with a Christmas theme but usually I make hearts and stars.
- Bake in a pre-heated oven (175°C/350°F) for 8-12 minutes, depends on your oven!
