WALNUT COOKIES WITH JAM

This recipe is embarrassingly simple, I have looking around at different food blogs and it made me realize that theses cookies really have the appearance of the simple cousin from the country! Simple and rough but they taste a lot of walnuts and if you use a nice kind of jam, they are quite good actually. I usually make all our cookies and I have just realized that it is quite a mistake because when I felt lazy recently and bought readymade ones, Marco complained almost bitterly about how awful they tasted. And he did not mean that I make the best cookies in the world, he just realized what a huge difference there is between homemade ones made with real butter and those made in big bakeries where you do not really know what they are using. So I made a mistake the day when I started making them, it is ok to make cookies now when it is cold and the oven provides some welcome warmth but summertime…



WALNUT COOKIES WITH JAM
About 30 cookies

150 g/5,3 oz salted butter
100 ml/ 0,42 cup sugar, preferably unrefined
75 g/ 2,6 oz roughly chopped walnuts
300 ml/1,25 cup flour
Jam, I used homemade peach jam

- Mix sugar and butter until it is smooth, add the walnuts and the flour and stir well.
- Make little balls and put them on a baking sheet. Make a little pit with your finger in the middle of the ball and put a little bit of jam into it with a spoon.
- Bake them for 12-15 minutes in a preheated oven (175°C/350°F).
