
Today I can see snow on the mountains, no not really because I can only that it is snowing and I have even seen snow-flakes whirling around outside our windows but fortunately the bad weather seems to remain on the other side of Pistoia. It is too early, it is only November… But at least the orange season has started so today I present a Sicilian recipe that combine sweet oranges and black olives.
INSALATA DI ARANCE or ORANGE AND BLACK OLIVE SALAD
Nice, sweet oranges
Very good black olives, preferably with the stone left because they are usually better
Good olive oil
Salt if you want.
- Peel the oranges and slice them thinly.
- De-stone the olives, or rather, cut the olives in two pieces and throw away the stone.
- Put the orange slices and the olives in a bowl, pour some olive oil over it and mix.
- If you want, you can add some salt but personally I think that the olives are salt enough. Let it marinate for an hour before serving.
