

Yes, it is another cookie recipe for the IMBB/SHF cookie swap! I made this yesterday evening and as they are vanishing rather rapidly here, I thought I better post the recipe otherwise I will not remember it! (I usually write down the recipes only if I am going to post it here) And maybe there is someone who feels like a chocolate and pinenut cookie right now...
BISCOTTI DI CIOCCOLATA E PINOLI or CHOCOLATE COOKIES WITH PINENUTS
150 g/5,3 oz salted butter
200 ml/0,85 cup brown sugar
4 tblsp cocoa powder
300 ml/ 1,25 cup flour
3 tblsp pinenuts
- Mix butter and sugar until smooth, add flour, cocoa powder and pinenuts and continue to mix it well.
- Roll the dough into a ‘sausage’ and let it rest wrapped in plastic foil for an hour in the fridge. (But I was in a hurry yesterday so I rolled them into little balls straight away and then I flattened them out before i put them on a baking sheet and it was ok)
- Slice it thinly (0,5 cm/0,2 in) and put them on baking sheets.
- Bake the cookies for 10-12 minutes in a pre-heated oven (175°C/350°F)
