TARTINE CON POMODORI SECCHI E CAPRINO or MINI SANDWICHES WITH SUN DRIED TOMATOES AND MARINATED GOAT’S CHEESE


Sometimes I make these for lunch when I’m alone home and feel like enjoy the pleasures of life…


TARTINE CON POMODORI SECCHI E CAPRINO or MINI SANDWICHES WITH SUN DRIED TOMATOES AND MARINATED GOAT’S CHEESE

Thin slices of white bread
100 g/ 3,5 oz sun dried tomatoes in oil
150 g/ 5.3 oz fresh goat’s cheese
1 egg
Fresh basil
Black pepper
Olive oil

- Cut the goat cheese into pieces and put them in a small bowl, then you pour on good olive oil, grind some black pepper over it and put in the finely shredded basil. Let the cheese marinate for 30-60 minutes.
- Meanwhile you hard boil the egg and when it is cold, you put both white and yolk into the food processor along with the sun dried tomatoes and pour in a little olive oil and mix it until it it’s nice and creamy.
- Distribute the tomato mix on the slices of bread and then you cut it into squares or triangles or both.
- Now you carefully take the goat cheese and cut slices that you put on the bread, garnish with the basil shreds and serve them.
