
Right now I am surrounded by fog for half of the day, every day and I am beginning to get a bit bored. The sun appears for a couple of hours after noon and then it disappears behind the mountain. There is not even a hint of a breeze or wind that could sweep away the fog and let us see the sun because all the weather forecast reports splendid weather but I want to know where that splendid weather is hiding now when I need it??! And I am living in Tuscany where fog is quite unusual, in the north of Italy, on the other side of the Apennines fog is a constant factor in this season and I cannot say that I envy them! So what else can I do than drink tea and eat cookies and dream of a sunny future….?
BISCOTTINI CON FRUTTA CANDITA or COOKIES WITH CANDIED FRUIT
175 g/6,1 oz butter
100 ml/0,42 cup brown sugar
3 tblsp chopped candied fruit
4oo-450 ml/ 1,7-1,9 cup flour
1 tsp vanilla sugar
- Stir sugar and butter well and add the candied fruit.
- Mix it with the flour and the vanilla sugar. It is supposed be a smooth dough that you easily can roll into small balls.
- Flatten the balls and put them on a baking-plate.
- Bake them for 8-10 minutes in a pre-heated oven (200°C/390°F).
