PASTA CON SALVIA E MANDORLE or PASTA WITH SAGE AND ALMONDS


A quick but different pasta recipe with the full flavour of the sage leaning on the more rounded taste of the almond.


PASTA CON SALVIA E MANDORLE or PASTA WITH SAGE AND ALMONDS
4 servings

400-500 g/14,1-17,6 0z pasta of any type
20-15 leaves of sage, it depends on how big they are and on how much you like sage
200 g/ 7 oz peeled almonds
100 ml/ 0,42 cup cream
1 clove of garlic
Salt
Olive oil

– Put on the water for the pasta.
– Put the almond, the sage leaves and some salt in the food processor and run it until it’s finely chopped. Pour on some olive oil and mix it until it has more or less the same consistency as pesto.
– Press on the garlic clove so that it opens up a bit and let it fry gently for a while in a pan in olive oil. Throw it away when it’s golden but keep the oil.
– Now you pour the sage-almond pesto into the pan and, stirring all the time, you mix it with the cream. Check the salt and let it warm up.
– When the pasta is ready, mix it all together and serve it hot!
